Kehwa (also spelled Kahwa or Qahwa)

Kehwa (also spelled Kahwa or Qahwa) is a traditional green tea preparation popular in Kashmir and some other regions of South Asia. It’s a fragrant, mildly spiced tea made with green tea leaves, spices, and often garnished with nuts. Here’s how you can make homemade Kehwa:

Ingredients:

  • 2 cups water
  • 1 tsp green tea leaves
  • 2-3 cardamom pods (slightly crushed)
  • 1 small cinnamon stick
  • 2-3 cloves
  • 1-2 strands of saffron (optional)
  • 1-2 tsp sugar or honey (optional)
  • 1-2 tsp crushed almonds or pistachios
  • A few rose petals (optional)

Instructions:

  1. Boil the water:
In a saucepan, bring 2 cups of water to a boil.

  2. Add spices:
Add the cardamom, cinnamon, cloves, and saffron (if using). Let the spices simmer for 2-3 minutes to release their flavors.

  3. Add green tea leaves:
Lower the heat and add green tea leaves. Let it steep for 2-3 minutes. Avoid oversteeping to prevent bitterness.

  4. Sweeten:
If you prefer, add sugar or honey to taste. Stir well.

  5. Strain and serve:
Strain the tea into cups. Garnish with crushed almonds, pistachios, and rose petals for a traditional touch.

Tips:

  • Use high-quality green tea leaves for the best flavor.
  • Adjust the quantity of spices to suit your taste.
  • If you’re serving Kehwa for guests, present it in clear glasses to show off its beautiful golden color.

Enjoy your soothing homemade Kehwa!😊
