
Here's a recipe for Malai Tawa Chicken:
Ingredients:
For the Marinade:
- 500 grams boneless chicken, cut into cubes
- 1/2 cup hung curd (thick yogurt)
- 2 tablespoons fresh cream (malai)
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 tablespoon lemon juice
- Salt to taste
For the Tawa Cooking:
- 2 tablespoons oil
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1/2 cup tomato puree
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- 1/4 cup fresh cream (malai)
- 1/4 cup milk
- Fresh coriander leaves, chopped for garnish
- Salt to taste
Instructions:
- In a large bowl, combine all the marinade ingredients - yogurt, fresh cream, ginger-garlic paste, turmeric powder, red chili powder, garam masala, lemon juice, and salt.
- Add the chicken pieces to the marinade and coat them well. Cover the bowl and let the chicken marinate for at least 2 hours in the refrigerator. For the best results, you can marinate it overnight.
- Heat a tawa (flat griddle) or a large non-stick pan and add oil to it.
- Add cumin seeds and let them splutter.
- Add finely chopped onions and green chilies. Sauté them until the onions turn translucent and golden brown.
- Add the marinated chicken pieces to the tawa. Cook them on medium heat, turning occasionally, until they are cooked through and lightly browned. This should take about 10-15 minutes.
- Once the chicken is cooked, add the tomato puree and cook for a few more minutes until the raw smell of the tomatoes disappears.
- Sprinkle kasuri methi (dried fenugreek leaves) over the chicken and stir.
- Reduce the heat to low and add fresh cream (malai) and milk. Mix well to create a creamy sauce.
- Let the Malai Tawa Chicken simmer for a few more minutes until the sauce thickens and the chicken is well coated with the creamy sauce. Adjust the salt and spice levels to your taste.
- Garnish with freshly chopped coriander leaves and serve hot.
- Malai Tawa Chicken is best enjoyed with naan, roti, or steamed rice. Enjoy your meal
