For the Dough:

  1. 3 cups all-purpose flour
  2. 1 teaspoon salt
  3. Water (as needed to make a soft dough)

For the Filling:

  1. 500g ground beef or lamb
  2. 1 large onion, finely chopped
  3. 4 cloves garlic, minced
  4. 1/2 cup chopped fresh coriander
  5. 1 teaspoon ground black pepper
  6. 1 teaspoon ground coriander
  7. Salt, to taste

For the Yogurt Sauce:

  1. 2 cups plain yogurt
  2. 2 cloves garlic, minced
  3. Salt, to taste

For the Tomato Sauce:

  1. 2 tablespoons vegetable oil
  2. 1 large onion, finely chopped
  3. 3 cloves garlic, minced
  4. 3 large tomatoes, chopped (or 1 can of chopped tomatoes)
  5. 1 teaspoon ground coriander
  6. 1 teaspoon paprika
  7. Salt and pepper, to taste

For Garnish:

  1. Freshly chopped coriander
  2. Red chili flakes (optional)

Instructions

Step 1: Make the Dough

  1. Mix the flour and salt in a large bowl.
  2. Gradually add water and knead until a soft, elastic dough forms.
  3. Cover the dough and let it rest for 30 minutes.
  4. Step 2: Prepare the Filling
  5. In a mixing bowl, combine the ground meat, chopped onion, minced garlic, fresh coriander, ground black pepper, ground coriander, and salt.
  6. Mix everything well and set aside.

Step 3: Roll Out the Dough

  1. Divide the dough into small pieces and roll each piece into a thin circle (about 3 inches in diameter).
  2. Place a teaspoon of the meat filling in the center of each dough circle.

Step 4: Shape the Dumplings

  1. Fold the dough over the filling to form a half-moon shape, then pinch the edges tightly to seal.
  2. Alternatively, bring the edges of the circle together at the top and pinch to form a round dumpling.

Step 5: Steam the Dumplings

  1. Place the dumplings in a greased steamer, ensuring they do not touch each other.
  2. Steam the dumplings for about 30-35 minutes or until the dough is cooked through.

Step 6: Make the Sauces

  • Yogurt Sauce: Mix the yogurt, minced garlic, and salt. Set aside.
  • Tomato Sauce: Heat oil in a pan, add the chopped onion, and sauté until golden brown. Add the minced garlic and sauté for another minute. Add the tomatoes, ground coriander, paprika, salt, and pepper. Simmer for 15-20 minutes until the sauce thickens.

Step 7: Serve

  1. Place the steamed dumplings on a platter.
  2. Pour the tomato sauce over the dumplings.
  3. Drizzle the yogurt sauce over the top.
  4. Garnish with fresh coriander and red chili flakes, if desired.
