Dumplings are a popular traditional dish. They are typically filled with seasoned ground meat and onions, then steamed and served with flavorful sauces. Here’s how you can make Dumplings Or Momos:
Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 teaspoon salt
- Water (as needed to make a soft dough)
For the Filling:
- 500g ground beef or lamb
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup chopped fresh coriander
- 1 teaspoon ground black pepper
- 1 teaspoon ground coriander
- Salt, to taste
For the Yogurt Sauce:
- 2 cups plain yogurt
- 2 cloves garlic, minced
- Salt, to taste
For the Tomato Sauce:
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 3 large tomatoes, chopped (or 1 can of chopped tomatoes)
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper, to taste
For Garnish:
- Freshly chopped coriander
- Red chili flakes (optional)
Instructions
Step 1: Make the Dough
- Mix the flour and salt in a large bowl.
- Gradually add water and knead until a soft, elastic dough forms.
- Cover the dough and let it rest for 30 minutes.
- Step 2: Prepare the Filling
- In a mixing bowl, combine the ground meat, chopped onion, minced garlic, fresh coriander, ground black pepper, ground coriander, and salt.
- Mix everything well and set aside.
Step 3: Roll Out the Dough
- Divide the dough into small pieces and roll each piece into a thin circle (about 3 inches in diameter).
- Place a teaspoon of the meat filling in the center of each dough circle.
Step 4: Shape the Dumplings
- Fold the dough over the filling to form a half-moon shape, then pinch the edges tightly to seal.
- Alternatively, bring the edges of the circle together at the top and pinch to form a round dumpling.
Step 5: Steam the Dumplings
- Place the dumplings in a greased steamer, ensuring they do not touch each other.
- Steam the dumplings for about 30-35 minutes or until the dough is cooked through.
Step 6: Make the Sauces
- Yogurt Sauce: Mix the yogurt, minced garlic, and salt. Set aside.
- Tomato Sauce: Heat oil in a pan, add the chopped onion, and sauté until golden brown. Add the minced garlic and sauté for another minute. Add the tomatoes, ground coriander, paprika, salt, and pepper. Simmer for 15-20 minutes until the sauce thickens.
Step 7: Serve
- Place the steamed dumplings on a platter.
- Pour the tomato sauce over the dumplings.
- Drizzle the yogurt sauce over the top.
- Garnish with fresh coriander and red chili flakes, if desired.
Enjoy your homemade Afghan Dumplings! They pair well with fresh salad or naan bread.
