Ingredients:

  1. 1 tablespoon oil (vegetable or olive oil)
  2. 1 onion, finely chopped
  3. 2 cloves garlic, minced
  4. 4 cups fresh or frozen corn kernels
  5. 1 medium potato, peeled and diced
  6. 4 cups vegetable or chicken broth
  7. Salt and pepper to taste
  8. 1/2 teaspoon dried thyme (optional)
  9. 1 cup milk (or coconut milk for a dairy-free option)
  10. Fresh parsley or chives for garnish (optional)

Instructions:

  • In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant.
  • Add the corn kernels and diced potato to the pot. Stir well to combine.
  • Pour in the vegetable or chicken broth. Season with salt, pepper, and dried thyme, if using. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, you can carefully transfer batches of the soup to a blender and blend until smooth. Be cautious when blending hot liquids.
  • Once the soup is smooth, return it to the pot and stir in the milk. Heat the soup gently, but do not let it boil again.
  • Adjust the seasoning if needed. If the soup is too thick, you can add more broth or milk to reach your desired consistency.
  • Ladle the corn soup into bowls, and garnish with fresh parsley or chives if desired.
