Singaporean Rice

 


"Singaporean Rice," is a popular and flavorful Pakistani and Indian rice dish. It's a fusion dish that incorporates a variety of ingredients. Here's a basic recipe:

Ingredients:

  • For the Rice Layer:

  1. 2 cups Basmati rice (cooked)
  2. 1/2 cup carrots (julienned)
  3. 1/2 cup peas
  4. 1/4 cup corn kernels (optional)
  5. 1 tablespoon ghee (clarified butter)
  6. Salt to taste

  • For the Chicken Layer:

  1. 1 lb boneless chicken (cut into small cubes)
  2. 1 tablespoon ginger-garlic paste
  3. 1 tablespoon soy sauce
  4. 1 tablespoon chili sauce
  5. 1 tablespoon ketchup
  6. Salt and pepper to taste
  7. 2 tablespoons oil 

  • For the Sauce:

  1. 1/4 cup ketchup
  2. 1/4 cup mayonnaise
  3. 1 tablespoon soy sauce
  4. 1 tablespoon chili sauce
  5. 1 tablespoon sugar
  • For Garnish:

  1. Fresh coriander leaves (chopped)
  2. Fried onions

Instructions:

  • Prepare Rice:

Cook the Basmati rice with a pinch of salt. Once cooked, fluff the rice with a fork and set it aside.

  • Vegetable Layer:

In a pan, heat the ghee. Add julienned carrots, peas, and corn. Stir-fry for a few minutes until the vegetables are slightly tender. Mix in the cooked rice and set aside.

  • Chicken Layer:

In another pan, heat oil. Add ginger-garlic paste and sauté until fragrant.

Add chicken cubes and cook until they are no longer pink.

Add soy sauce, chili sauce, ketchup, salt, and pepper. Cook until the chicken is cooked through.

  • Assemble:

In a serving dish, first, spread the vegetable and rice mixture evenly.

Next, layer the cooked chicken on top of the rice mixture.

  • Prepare Sauce:

Mix ketchup, mayonnaise, soy sauce, chili sauce, and sugar in a bowl. Adjust the quantities according to your taste.

Pour the sauce over the layered rice and chicken.

  • Garnish:

Garnish with fresh coriander leaves and fried onions.

  • Serve:

Serve Singaporean Rice hot, scoop all the layers for a delicious combination of flavors.
