
Rus Bukhari, also known as Arabic Tomato Rice, is a delicious and fragrant Middle Eastern dish. It's typically made with rice, tomatoes, and an aromatic blend of spices. Here's a basic recipe for Rus Bukhari:
Ingredients:
For the Rice:
- 2 cups long-grain Basmati rice
- 4 cups water
- 1 teaspoon salt
For the Tomato Sauce:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 large tomatoes, chopped
- 2 teaspoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cloves
- Salt and black pepper to taste
- 1/4 cup fresh cilantro or parsley, chopped (for garnish)
Instructions:
- Rinse the rice under cold water until the water runs clear. Drain the rice and set it aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent, about 3-4 minutes.
- Add the chopped tomatoes and tomato paste to the pot and cook for another 5 minutes, or until the tomatoes have softened.
- Stir in all the ground spices (cumin, coriander, cinnamon, cardamom, and cloves) and cook for another 2 minutes. Season with salt and black pepper to taste.
- Add the rinsed and drained rice to the pot, stirring to combine it with the tomato mixture. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
- Pour in the water and bring the mixture to a boil. Once it's boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, remove the pot from the heat and let it sit, covered, for another 10 minutes. This allows the rice to steam and become fluffy.
- Fluff the rice with a fork and garnish with chopped cilantro or parsley before serving.
