Hunter Beef

Hunter Beef is essentially a type of beef roast that is marinated, smoked, and then thinly sliced for serving. It's typically served as a cold appetizer or in sandwiches. Here's a basic recipe for making Hunter Beef at home:

Ingredients:

  1. 2 pounds (about 1 kg) beef, preferably a boneless beef cut like top round or rump
  2. 2 tablespoons ginger-garlic paste
  3. 1/4 cup vinegar
  4. 2 tablespoons Worcestershire sauce
  5. 1 teaspoon black pepper
  6. 1 teaspoon paprika (for color and mild heat)
  7. 1 teaspoon cayenne pepper (adjust for spiciness)
  8. 1 teaspoon salt (or to taste)
  9. 1 teaspoon sugar
  10. 1/2 teaspoon ground coriander
  11. 1/2 teaspoon ground cumin
  12. 1/2 teaspoon ground mustard
  13. 1/4 teaspoon ground cloves
  14. 1/4 teaspoon ground cinnamon
  15. 1/4 teaspoon ground nutmeg
  16. 1/4 teaspoon ground allspice
  17. Wood chips for smoking (optional)

Instructions:

  • Prepare the Marinade:

In a bowl, combine the ginger-garlic paste, vinegar, Worcestershire sauce, black pepper, paprika, cayenne pepper, salt, sugar, ground coriander, ground cumin, ground mustard, ground cloves, ground cinnamon, ground nutmeg, and ground allspice. Mix the marinade until it's well combined.

  • Marinate the Beef:

Place the beef in a large bowl or a resealable plastic bag.

Pour the marinade over the beef and ensure it's thoroughly coated. Seal the bag or cover the bowl with plastic wrap and refrigerate for at least 24-48 hours, turning the meat occasionally to distribute the marinade.

  • Smoke the Beef (Optional):

If you are a smoker, you can smoke the marinated beef using wood chips for added flavor. Follow your smoker's instructions for temperature and smoking time.

  • Roast the Beef:

Preheat your oven to 300°F (150°C).

Place the marinated beef on a rack in a roasting pan and roast it for about 2 to 2.5 hours, or until the internal temperature reaches your desired level of doneness (usually around 145°F or 63°C for medium-rare).

  • Cool and Slice:

Allow the roasted beef to cool to room temperature, and then refrigerate it for a few hours or overnight to firm up.

When ready to serve, thinly slice the beef. It's often served cold or at room temperature as an appetizer or in sandwiches.

Hunter Beef is a flavorful and popular dish in many regions. It's a great addition to sandwiches, salads, or as a cold appetizer with your choice of condiments and side dishes.
