Halwa Puri is a popular Pakistani and North Indian breakfast dish that consists of a sweet semolina pudding called "halwa" and deep-fried bread known as "puri." Here's a basic recipe for making Halwa Puri:
Ingredients:
For Halwa:
- 1 cup semolina (suji or rava)
- 1/2 cup ghee or clarified butter
- 1 cup sugar
- 2 cups water
- A pinch of saffron strands (optional)
- 1/2 teaspoon cardamom powder
- 2-3 tablespoons chopped nuts (almonds, cashews, and pistachios)

- A pinch of salt
- Water, as needed
- Vegetable oil, for deep frying
Instructions:
Prepare the Puri:
a. In a mixing bowl, combine the wheat flour and a pinch of salt.
b. Gradually add water and knead the mixture into a smooth, firm dough. The dough should not be too soft or too hard.
c. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
d. Divide the dough into small, equal-sized balls (about golf ball-sized).
e. Roll each ball into a small circle (puris) with a rolling pin. They should be around 4-5 inches in diameter.
f. Heat vegetable oil in a deep frying pan or kadai over medium heat.
g. Carefully slide one puri into the hot oil, and using a slotted spoon, gently press the puri down to help it puff up.
h. Fry the puri until it's golden brown on both sides.
i. Remove the puri from the oil and place it on a plate lined with paper towels to remove excess oil.
j. Repeat the process for the remaining dough balls. Keep the puris warm by covering them with a clean cloth.
Prepare the Halwa:
a. In a separate pan, heat the ghee over medium heat.
b. Add the semolina (suji) and roast it in the ghee until it turns golden brown. Keep stirring to prevent it from burning.
c. In another saucepan, heat the water. If using saffron, soak a pinch of saffron strands in a tablespoon of hot water.
d. Once the semolina is roasted, slowly add the hot water (and saffron water if using) while continuously stirring to avoid lumps.
e. Add sugar and continue to cook, stirring constantly until the halwa thickens and leaves the sides of the pan.
f. Add cardamom powder and chopped nuts to the halwa and mix well.
g. Remove the halwa from heat.
Serve:
a. Place a portion of halwa on a plate and serve it with the hot puris.
