Chicken Shashlik

Here's a basic recipe for chicken shashlik:

Ingredients:

For the Chicken Marinade:

  1. 500g boneless chicken, cut into 1-inch cubes
  2. 1/4 cup plain yogurt
  3. 2 tablespoons vegetable oil
  4. 1 tablespoon lemon juice
  5. 2 cloves garlic, minced
  6. 1 teaspoon ginger paste
  7. 1 teaspoon ground cumin
  8. 1 teaspoon ground coriander
  9. 1/2 teaspoon turmeric
  10. 1/2 teaspoon paprika or chili powder (adjust to your spice preference)
  11. Salt and pepper to taste

For the Shashlik Skewers:

  1. Bell peppers (red, green, and yellow), cut into chunks
  2. Red onion, cut into chunks
  3. Cherry tomatoes
  4. Pineapple chunks (optional)
  5. Skewers, either metal or bamboo (if using bamboo, soak them in water for at least 30 minutes to prevent burning)

Instructions:

Marinate the Chicken:

  1. In a bowl, combine all the ingredients for the chicken marinade.
  2. Add the chicken cubes to the marinade and mix well, ensuring each piece is coated.
  3. Cover the bowl and refrigerate for at least 2 hours, or overnight for the best results.

Assemble the Shashlik Skewers:

  1. Preheat your grill or oven to medium-high heat.
  2. Thread the marinated chicken pieces onto the skewers, alternating with chunks of bell peppers, onions, cherry tomatoes, and pineapple if desired.

Grill or Bake:

  • Grill the skewers for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char. You can also bake them in a preheated oven at 200°C (400°F) for 15-20 minutes or until the chicken is fully cooked.

Serve:

  • Remove the skewers from the grill or oven.
  • Serve the chicken shashlik hot with rice, naan bread, or pita, and your favorite dipping sauce or chutney.
