Chicken Alfredo Fettucine

Here's a classic Chicken Alfredo Fettuccine recipe:

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning (a mix of dried oregano, basil, and thyme)
  • Salt and black pepper to taste

For the Alfredo Sauce:

  • 1/2 cup (1 stick) unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • Salt and black pepper to taste
  • 12-16 ounces fettuccine pasta
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Start by cooking the fettuccine pasta according to the package instructions. Drain and set aside.
  2. While the pasta is cooking, prepare the chicken. Season the chicken breasts with Italian seasoning, salt, and black pepper.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until they are cooked through and no longer pink in the center. The exact cooking time may vary depending on the thickness of your chicken breasts. Once cooked, remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the butter and minced garlic. Sauté the garlic for about a minute, making sure it doesn't brown.
  5. Pour in the heavy cream and bring it to a simmer. Let it simmer for a few minutes to thicken slightly.
  6. Reduce the heat to low, and gradually whisk in the grated Parmesan cheese. Continue to whisk until the sauce is smooth and the cheese is completely melted.
  7. Season the Alfredo sauce with salt and black pepper to taste. Keep in mind that Parmesan cheese is already salty, so you may not need much extra salt.
  8. Slice the cooked chicken into thin strips or cubes and add it to the Alfredo sauce. Let the chicken heat through in the sauce for a couple of minutes.
  9. Add the cooked and drained fettuccine pasta to the skillet with the chicken and Alfredo sauce. Toss everything together until the pasta is well coated with the sauce and the chicken is evenly distributed.
  10. If desired, garnish with chopped fresh parsley for added flavor and presentation.
