
Cake Rusk is a delightful tea-time snack made from twice-baked cake slices. Here's a simple recipe to make cake rusk at home:
Ingredients:
For the Cake:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 eggs
- 1/4 cup milk
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- A pinch of salt
For Baking Rusk:
- 1/4 cup melted butter for brushing
Instructions:
Prepare the Cake:
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.
- In a mixing bowl, cream the softened butter and sugar until it becomes light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Combine the flour, baking powder, and a pinch of salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until well combined.
- Pour the cake batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely.
Bake the Cake Rusk:
- Preheat your oven to 275°F (135°C).
- Once the cake has cooled, remove it from the loaf pan and cut it into slices about 1/2 inch thick.
- Arrange the cake slices on a baking sheet.
- Brush both sides of each slice with melted butter.
- Place the slices back onto the baking sheet and bake in the low-temperature oven for 30-35 minutes. You want them to dry out and become crispy but not brown too much. You may need to flip the slices halfway through the baking process.
Cool and Store:
- Remove the cake rusks from the oven and let them cool completely.
- Store them in an airtight container once they have cooled completely.
