Mint Sauce/Mint Chatni

Here's a simple recipe for mint chutney:

Ingredients:

1 cup fresh mint leaves (washed and stems removed)

1/2 cup fresh coriander leaves (washed and stems removed)

2-3 green chilies (adjust to your spice preference)

1 small onion (optional, for added flavor)

2 cloves garlic (optional)

1/2-inch piece of ginger (optional)

1 tablespoon lemon juice (adjust to taste)

1/2 teaspoon cumin seeds (jeera)

Salt to taste

1-2 tablespoons water (as needed for consistency)

1-2 teaspoons sugar (optional, to balance flavors)

Instructions:

Wash the mint leaves and coriander leaves thoroughly and drain any excess water.

If using, peel and roughly chop the onion, garlic, and ginger.

In a blender or food processor, add the mint leaves, coriander leaves, green chilies, onion (if using), garlic (if using), and ginger (if using).

Add cumin seeds, lemon juice, salt, and sugar (if using) to the blender.

Start blending the ingredients at a low speed, gradually increasing the speed. If the mixture is too thick, you can add a little water to help with blending. Scrape down the sides of the blender jar as needed to ensure all the ingredients are well blended.

Continue blending until you achieve a smooth and vibrant green paste. Taste the chutney and adjust the salt, sugar, or lemon juice according to your preference. If you want it spicier, you can add more green chilies.

Transfer the mint chutney to a clean, airtight container.

You can serve the mint chutney immediately with your favorite snacks or refrigerate it for later use. It stays fresh in the refrigerator for about a week.

Mint chutney is a versatile condiment that can be customized to suit your taste. You can also experiment with adding other ingredients like roasted cumin powder, yogurt, or coconut for different variations. Enjoy it as a dip, spread, or accompaniment to elevate the flavors of your meals.
