
Ingredients:
- 2 cups full-fat milk
- 1/2 cup sweetened condensed milk
- 1/4 cup milk powder
- 1/4 cup heavy cream
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional, for flavor and color)
- 2 tablespoons chopped nuts (such as pistachios, almonds, or cashews)
Instructions:
- Prepare the Saffron (if using):
If you're using saffron strands, crush them slightly and soak them in 1-2 tablespoons of warm milk. This will help release the flavor and color. Set it aside.
- Prepare the Milk Mixture:
In a heavy-bottomed pan, bring the 2 cups of full-fat milk to a boil over medium heat. Stir continuously to prevent it from sticking to the bottom of the pan.
Once the milk comes to a boil, reduce the heat to low and simmer. Continue to cook, stirring frequently, until the milk reduces to about half its original volume. This can take around 20-25 minutes.
- Add Sweeteners and Flavor:
Stir in the sweetened condensed milk, milk powder, and heavy cream. Mix well to combine.
Add the saffron milk mixture (if using) and cardamom powder. Stir until everything is thoroughly combined.
- Cool the Mixture:
Allow the mixture to cool to room temperature. Stir it occasionally to prevent a skin from forming on top.
- Add Nuts and Pour into Molds:
Once the mixture has cooled, add the chopped nuts and mix them in.
- Freeze the Kulfi:
Pour the kulfi mixture into individual kulfi molds or small cups. You can also use popsicle molds or small disposable cups.
Cover each mold or cup with aluminum foil and insert a wooden stick or ice cream stick into the center of each one.
Freeze Until Set:
Place the molds in the freezer and let the kulfi freeze for at least 6-8 hours, or until it's completely set.
Serve:
To remove the kulfi from the molds, briefly dip them in warm water to loosen the kulfi, then slide it out onto a plate.
Serve your homemade kulfi garnished with additional chopped nuts if desired.
Kulfi has a rich and creamy texture with the delightful flavor of cardamom and saffron. It's a perfect dessert to enjoy on a hot day or as a sweet treat after a delicious Indian meal.
