
Ingredients:
For the Falooda Noodles:
1/2 cup falooda sev (thin vermicelli noodles)
Water for boiling
Ice water for rinsing
For Sweet Basil Seeds (Sabja):
2 tablespoons basil seeds (sabja)
1/2 cup water (for soaking)
For the Rose Syrup:
1/4 cup rose syrup (Rooh Afza or any rose syrup of your choice)
For Assembling:
2 cups chilled milk
2-3 tablespoons sugar (adjust to taste)
1/2 cup vanilla ice cream
Chopped nuts (almonds, pistachios)
Chopped fruits (strawberries, mango, or any of your choice)
Cherry or tutti-frutti for garnish (optional)
Instructions:
1. Prepare the Falooda Noodles:
Boil water in a pot and add the falooda sev (vermicelli noodles).
Cook them as per the package instructions or until they are soft but still firm.
Drain and rinse the cooked noodles in ice water to cool them down and prevent sticking.
2. Soak Basil Seeds (Sabja):
In a separate bowl, soak the basil seeds (sabja) in water for about 20-30 minutes until they swell up and become gel-like.
3. Prepare Rose Syrup:
Dilute the rose syrup with a little water to make it easier to pour and mix.
4. Prepare the Milk Mixture:
In a separate bowl, mix the chilled milk and sugar until the sugar dissolves. Adjust the sugar to your taste.
5. Assemble the Falooda:
Take a tall glass or serving glass.
First, add a tablespoon of soaked basil seeds (sabja) at the bottom.
Follow with a couple of tablespoons of cooked and cooled falooda sev (vermicelli noodles).
Drizzle about 2 tablespoons of rose syrup over the noodles.
Pour the sweetened milk mixture into the glass, leaving some space at the top.
Add a scoop of vanilla ice cream on top.
Garnish with chopped nuts and fruits. You can also add a cherry or tutti-frutti for extra color and flavor.
Drizzle a little more rose syrup on top for added sweetness and a vibrant look.
6. Serve:
Insert a long spoon or straw and serve your Falooda immediately.
Stir before drinking to mix all the flavors and textures.
