Ingredients:
For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
For the Sandwich:
- 4 slices of bread (your choice, but hearty bread works well)
- 2 tablespoons butter, softened
- 1 cup shredded cheese (cheddar, Swiss, mozzarella, or your favorite)
- 1/2 cup lettuce leaves or baby spinach
- 1/2 cup sliced tomatoes
- 1/4 cup thinly sliced red onions (optional)
- 2 tablespoons mayonnaise
- 2 tablespoons barbecue sauce (optional)
- Instructions:
Prepare the Grilled Chicken:
- In a bowl, mix together the olive oil, garlic powder, paprika, salt, and black pepper.
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to an even thickness, about 1/2 inch thick.
- Brush the chicken breasts with the prepared olive oil mixture, ensuring they are well coated.
- Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-8 minutes per side or until it's cooked through (internal temperature reaches 165°F or 74°C) and has grill marks.
