Chicken Cheese Grilled Sandwich

 


  Here's a recipe for a tasty Grilled Chicken and Cheese Sandwich:


Ingredients:
For the Grilled Chicken:
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
For the Sandwich:
  • 4 slices of bread (your choice, but hearty bread works well)
  • 2 tablespoons butter, softened
  • 1 cup shredded cheese (cheddar, Swiss, mozzarella, or your favorite)
  • 1/2 cup lettuce leaves or baby spinach
  • 1/2 cup sliced tomatoes
  • 1/4 cup thinly sliced red onions (optional)
  • 2 tablespoons mayonnaise
  • 2 tablespoons barbecue sauce (optional)
  • Instructions:
Prepare the Grilled Chicken:
  • In a bowl, mix together the olive oil, garlic powder, paprika, salt, and black pepper.
  • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to an even thickness, about 1/2 inch thick.
  • Brush the chicken breasts with the prepared olive oil mixture, ensuring they are well coated.
  • Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-8 minutes per side or until it's cooked through (internal temperature reaches 165°F or 74°C) and has grill marks. Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
Assemble the sandwich:
  • Butter one side of each slice of bread.
  • Place the bread slices, buttered side down, on a clean work surface.
  • On two slices of bread, spread a thin layer of mayonnaise.
  • On the other two slices, spread a thin layer of barbecue sauce (if using).
  • Layer the grilled chicken slices on the bread slices with mayonnaise.
  • Sprinkle shredded cheese over the chicken.
  • Add lettuce or spinach, sliced tomatoes, and red onions (if using).
  • Place the barbecue sauce-coated bread slices on top, barbecue side down, to complete the sandwiches.
Grill the Sandwich:
  • Preheat a skillet or griddle over medium heat.
  • Carefully transfer the assembled sandwiches to the skillet or griddle.
  • Cook for about 2-3 minutes on each side or until the bread is golden brown, and the cheese is melted.
  • Once both sides are crispy and the cheese is gooey, remove the sandwiches from the skillet.
  • Allow them to cool slightly for a minute or two before cutting them in half diagonally.
  • Serve your Grilled Chicken and Cheese Sandwich hot with your favorite side dishes, such as coleslaw, potato salad, or a pickle. Enjoy!
