Cheesy Macaroni



Cheesy macaroni and cheese is a beloved comfort food dish. Here's a basic recipe to make a creamy and delicious cheesy macaroni:

Ingredients:

  1. 2 cups elbow macaroni or your favorite pasta shape
  2. 4 cups shredded sharp cheddar cheese (or a mix of your favorite cheeses)
  3. 2 cups milk
  4. 1/4 cup unsalted butter
  5. 1/4 cup all-purpose flour
  6. 1/2 teaspoon salt (or to taste)
  7. 1/4 teaspoon black pepper (or to taste)
  8. 1/4 teaspoon paprika (optional, for flavor)
  9. 1/4 teaspoon dry mustard (optional, for flavor)
  10. 1/2 cup breadcrumbs (for topping, optional)

Instructions:

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add the macaroni and cook according to the package instructions until al dente.
  • Drain the pasta and set it aside.

Prepare the Cheese Sauce:

  • In a medium saucepan, melt the butter over medium heat.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly until it forms a smooth paste (this is called a roux).
  • Gradually whisk in the milk and continue to cook, whisking constantly, until the mixture thickens and comes to a simmer.
  • Reduce the heat to low and add the shredded cheese, reserving some for topping. Stir until the cheese is completely melted and the sauce is smooth.
  • Season the cheese sauce with salt, pepper, paprika, and dry mustard, if using.

Combine Pasta and Cheese Sauce:

  • Add the cooked and drained macaroni to the cheese sauce. Stir to coat the pasta evenly with the cheese sauce.

Bake (Optional):

  • Preheat your oven to 350°F (175°C).
  • Transfer the macaroni and cheese mixture to a greased baking dish.
  • Sprinkle the reserved cheese on top, and if desired, sprinkle breadcrumbs over the cheese.
  • Bake in the preheated oven for about 20-25 minutes or until the top is golden brown and the cheese is bubbly.
