Dum Allo





 Here's a basic recipe for Dum Aloo:

Ingredients:

For the potatoes:

12-15 small potatoes (baby potatoes) or 4-5 medium-sized potatoes

Oil for frying

For the gravy:

2 tablespoons oil or ghee

1 teaspoon cumin seeds

1 large onion, finely chopped

2 teaspoons ginger-garlic paste

2 tomatoes, pureed

1/2 cup yogurt (curd), beaten

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon ground coriander

1 teaspoon garam masala

Salt to taste

1 cup water (adjust as needed)

Chopped cilantro (coriander leaves) for garnishing

Instructions:

Prepare the Potatoes:

Wash and scrub the potatoes thoroughly. If using baby potatoes, you can leave the skin on. If using larger potatoes, peel them and cut them into bite-sized pieces.

Heat oil in a pan and fry the potatoes until they turn golden brown. Remove and set aside.

Prepare the Gravy:

Heat oil or ghee in a pot or pan.

Add cumin seeds and let them splutter.

Add chopped onions and sauté until they turn golden brown.

Add Spices:

Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add tomato puree and cook until the oil starts to separate from the mixture.

Spices and Yogurt:

Add turmeric powder, red chili powder, ground coriander, garam masala, and salt. Mix well.

Add beaten yogurt and stir continuously to avoid curdling. Cook until the oil starts to separate again.

Add Potatoes:

Add the fried potatoes to the gravy and coat them with the spices.

Cooking Dum Aloo:

Add water to adjust the consistency of the gravy. Cover the pot with a lid.

Allow the Dum Aloo to simmer on low heat for about 15-20 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

Garnish and Serve:

Once the potatoes are tender and the flavors are well combined, garnish with chopped cilantro (coriander leaves).

Serve Dum Aloo hot with naan and rice.
