500g boneless chicken, cut into bite-sized pieces

1/4 cup cornstarch

For the Sauce:
1 tablespoon oil
1 tablespoon ginger-garlic paste
1 small onion, finely chopped
1 small bell pepper, finely chopped
2-3 green chilies, finely chopped (adjust to taste)
2 tablespoons soy sauce
1 tablespoon tomato ketchup
1 tablespoon chili sauce (adjust to taste)
1 teaspoon vinegar
1 teaspoon sugar
Salt and pepper to taste
1 cup chicken broth or water
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry) to thicken the sauce

Cooked rice
Instructions:
In a bowl, mix the all-purpose flour, cornstarch, ginger-garlic paste, salt, and pepper. Add a little water to make a thick batter. Coat the chicken pieces with this batter.
Heat oil in a deep pan for frying. Once hot, carefully add the coated chicken pieces and fry until they are golden brown and crispy. Remove them and place them on paper towels to drain excess oil.
In another pan, heat 1 tablespoon of oil. Add the ginger-garlic paste and sauté for a minute until fragrant.
Add the chopped onions, bell pepper, and green chilies. Stir-fry until the vegetables are slightly softened.
Add soy sauce, tomato ketchup, chili sauce, vinegar, sugar, salt, and pepper. Mix well.
Pour in the chicken broth or water and bring the mixture to a simmer.
Slowly add the cornstarch slurry while stirring continuously. This will help thicken the sauce. Adjust the thickness of the sauce according to your preference.
Add the fried chicken pieces to the sauce and coat them well.
Let the chicken cook in the sauce for a couple of minutes, allowing the flavors to meld.
Once the chicken is well coated and heated through, remove from heat.
Serve the Chicken Manchurian over cooked rice.
